Batuq Bacanora Reserva de la Casa is the highest quality bacanora. After 20 years of planting agave on the family ranch, the Reserva is made from the best, older "capon" agaves between 10-20 years that are personally selected by Maestro Vinatero Rafael Quijada. To produce a purer agave flavor, half are processed in a mesquite fired autoclave and half are slow cooked underground in a "malla" with mesquite and ironwood. The water source is a local spring, wild yeast are used for natural fermentation, then double distilled with a mesquite fired stainless/copper still.
