We are beyond excited to announce the first release of “The Darkening”, a Heavily Peated American Single Malt Whiskey made with Naples grown barley and peated with NYS peat harvested not far from our Distillery. This is the culmination of 7+ years of hard work, patience, collaboration with Farmers and Maltsters, and to be quite honest the main reason Hollerhorn was built. This is our oldest release to date, and it began its long 6 year rest in ex-Bourbon barrels before being transferred 3+ years ago into a McGregor's Vineyard Saperavi cask to finish its wait. 138 bottles were yielded from the cask, and it started at 100 proof, and through dunnage warehouse aging it lost proof (alcohol) to the angels to end up at 93 proof today for bottling. No water was added. Non chill filtered as always, and very minimal filtering just the way it should be!
