Second generation maestro distilador Armando Rodriguez crafts this agave according to the traditional method of his home town of Sola de Vega, Oaxaca: first cooked in an earthen oven, then mashed by hand and fermented in sabino vats, and finally distilled in a clay pot. A very wide and tall maguey, the rare arroqueño produces some of the most complex mezcals. Sometimes called sierrudo, the magueys can be found throughout Oaxaca, and are known for the dark tips of their leaves, and mature at 18-25 years. Very savory in flavor.
