Its enthralling bouquet of raw honey and almond pasta, contrasted by exotic curries, ginger and Asian pear, keeps you at the edge of your seat. There are depths of texture here, at first creamy and soothing, then piercing and mineral. Enriching hints of hazelnut complement its tart orchard fruits, further intensified by notes of lemon oil and spice. This heady experience is reeled in by bright acidity that keeps the expression remarkably fresh and leaves the mouth watering. The 2015 Demetra finishes long with inner florals that linger on and on. Insert this into a blind Champagne tasting, and watch jaws drop at the unveiling. This is a blend of 70% Chardonnay, 20% Pinot Noir and 10% Pinot Blanc.
