From 30 to 60 year old Melon de Bourgogne vines planted in a mix of mica, schist, granite and sand, with the wine then aged for 7 years (!!!) on the lees. All that leads to something much closer to classic, crisp, clean Muscadet than a lot of the new style terroir-driven Muscadet wines around these days. Lees aging, in this case, preserves a lot of freshness, while adding a textural element and a more savory palate overall. It's an absolute delight with seafood, but will be at home at the table regardless of what food is served, from salad to steak.
