Aurélien Laherte is part of a dynamic generation of young vignerons making waves in Champagne and producing a fine array of terroir-driven wines using a natural approach to viticulture and winemaking. Laherte and his father, Michel, both believe that the use of chemicals and herbicides prevents a full expression of terroir. ‘Ultradition’ Brut is a Pinot Meunier (60%) dominant blend, rounded out with Chardonnay (30%) and Pinot Noir (10%), fermented in foudre, tank, & barrel, with regular lees stirring. Interestingly, this takes on red fruit notes a la plum and cherry, with a slight citrus tone emerging on the finish thanks to the Chardonnay.

Based on the 2016 vintage—complemented by reserve wines from 2015 and 2014—and disgorged in April 2019 with five grams per liter dosage, the NV Brut Blanc de Blancs Ultradition unwinds in the glass with notes of warm bread, green apple, citrus oil and peach. Medium to full-bodied, bright and incisive, with a fleshy core of lively fruit, a pinpoint mousse and racy spine of acidity, it's already drinking well.
