A new face on the Swiss wine scene, Ilona Thétaz has quickly made a name for herself among the young guard of winegrowers to follow. Installed on the heights of Saxon, in the middle of the apricot trees and sheep, she shapes vintage after vintage of authentic wines. Her wines are made with as few inputs as possible, but must still be highly drinkable. This white is a blend of Chasselas, a low acid but very fresh grape that is the star of Switzerland's wine scene, and Sauvignon Blanc.
