This producer goes to phenomenal lengths to produce the cleanest sake possible. Some might even say they go over the top. When the temperature falls below 14 degrees Fahrenheit, they build an igloo. Inside this structure, the air is a constant 28 degrees Fahrenheit, with 90% humidity and no wind, and is an environment free of harmful bacteria. In addition–because they do not like the bitter compounds that result when the sake is pressed from the lees–they put the sake into canvas bags and hang them to slowly drip the "free run" sake. Ginga Shizuku "Divine Droplets" is highly fragrant, lovely, elegant, very clean, and subtle. All the trouble the brewmaster goes through shows in the glass. This release is expensive but well worth it.
