Recently, we had the chance to revisit this wine after Cave Spring’s importer discovered a small stash of the 2011 vintage in their warehouse. Dubious but curious, we opened a bottle and were amazed by what we found. While the wine showed some golden color, it was remarkably fresh, bursting with orchard fruit, wet stone, and a distinctive waxy, wooly character reminiscent of a well-aged Loire Valley Chenin Blanc.It’s absolutely a stunner and a wine that you should share with your friends who don’t think white wine can age!
