A library release from a great domaine in Chablis. This 1er cru spent an astounding 11 years aging on the fine lees before being bottled and then aged an addition couple of years in the cellar. Many believe Defaix's Cote de Lechet bottling to be his most complex and profound Premier Cru. As with the other 1er Crus, the vines are 45 years of age on average which results in consistently smaller yields and greater concentration. A fantastic example of the aging potential of Chablis!

Daniel-Etienne Defaix's commitment to extraordinarily long aging, organic farming, and natural fermentations puts him well outside the region's mainstream, but his deeply expressive late-released wines are Chablis to their core. Côte de Lechet, on a remarkably steep site with very poor soil, produces a wine that Defaix describes as embodying “the real, true mineral expression of Chablis.” Totally unoaked, this bottling spends years on the lees before being aged and bottled. This library release from 2010 is a rare gem from a classic vintage!
