Composed of 55% Folle Blanche and 25% Chardonnay and 20% Pinot Noir. It's a zesty, refreshing and razor-sharp bubbly from a biodynamic producer just outside Nantes. Hand-harvested, wild yeast, méthode traditionelle, aged 24 months on lees. Zero dosage. A lot going on here: ripe, fresh lime zest, white flowers, almond, hazelnut, brioche and wet stone. Very refreshing and pure fruit that bring the classic mineral qualities one would expect from this area to a sparkling wine.
