Joseph Dorbon’s setup is simple: three hectares of organically tended vines on prime south-facing slopes above his home village of Vadans, a horse to help him plow, and a subterranean, 16th-century cellar in which his soulful wines slowly take shape.
“Cuvée des Moyne”—moyne being the Middle French spelling of moine, or “monk”— comes from an interplanted parcel of 45 to 75 year old Chardonnay (80%) and Savagnin (20%) vines. Chiseled in its minerality, this white offers bright and zesty mandarin-citrus notes, alongside hints of curry leaf and spicy marzipan. A lively spine of acidity gives the wine life and energy. This is a layered and saline example of sous-voile that is head-spinningly complex and a pure joy to sit with over a few hours.
