Six Eighty Cellars Description
The first of our white wines to make its way into a Concrete Diamond (vessel for wine fermentation and aging), this estate-grown Riesling was picked in early October and allowed to ferment with ambient yeast. The natural thermal qualities of the concrete kept the fermentation slow and steady, and the process was stopped with ample residual sugar to balance the firm acidity, similar to a German Kabinett. Super well-balanced!
