Talk about a fun, bright, and very Brut-like sparkling sake that was made specifically for all things that come from the sea like oysters, shellfish, and other goodies. Crisp, tight, and dry, which the female master brewer Miho Imada achieved by using a white koji mold to bring about secondary fermentation in the bottle. Look for pear, apple, and Lemonhead candy hints, with a clean and compact crisp finish. Really fun!
