To obtain the purest Sherry, Lustau brings back the “En Rama” style, which means bottling the wine straight from the cask with no additional treatment. This process usually takes place in spring, when the layer of living yeast, known as “flor” reaches its zenith. The inland climate in the city of Jerez de la Frontera provides a more rounded and fuller style of wine, with a pale gold colour and soft, balsamic aromas, with notes of resin and bitter oranges. It is full bodied and elegant on the palate, with a tangy finish.
