Located just west of Sancerre, this Menetou-Salon Blanc from Domaine de la Fidelite is crafted from 100% Sauvignon Blanc, grown on the distinctive Kimmeridgian limestone clay and marl soils of the region. The wine undergoes a long, slow fermentation with indigenous yeasts in temperature-controlled stainless steel tanks, followed by several months of aging on the fine lees.
